In 2012, Kathy Vega was living in Denver, but missing food from her home country of the Philippines–so she opened a food truck. The “Cutthroat Kitchen” and “CHOPPED” contestant serves scratch-made cuisine with love each day, having “some of the best lumpia (Filipino spring rolls) in Chicago” according to The Infatuation, which is the food blog of MICHELIN fame.
